2. Distillation - Speyfly Gin is distilled using our handmade copper pot stills. These stills were made by a local artisan on the premises of our distillery. The nature of the handmade copper stills not only harkens back to the days of traditional gin making processes, but also produces a cleaner, smoother tasting gin.

3. Condensation - The alcohol vapor rises up through the still and enters a cooling system, where it condenses back into a liquid. The condensed liquid, which now contains the flavors of the botanicals, is known as the "distillate" or "new make spirit."

4. Dilution & Filtration - This step ensures that our gin is not too strong. We filter out any impurities and achieve our the smooth texture we are renowned for.
